The Opportunity
Take the lead in building a new breakfast operation with a growing hospitality business in New South Wales.
We are looking for an experienced Breakfast Sous Chef who is ready to step into a hands-on leadership role and work closely with the Head Chef to establish a high-quality breakfast offering from the ground up.
This is more than a service-based chef position. You'll have the opportunity to influence menus, develop kitchen systems, mentor a small team and help create the food direction of a new breakfast operation.
The position offers $80,000 + superannuation, a permanent full-time role, a 38-hour five-day roster and two consecutive days off each week.
Key Responsibilities
- Lead the daily breakfast preparation and service operation
- Work closely with the Head Chef to establish efficient kitchen systems
- Supervise and guide a team of up to five breakfast chefs
- Train and mentor junior kitchen team members
- Contribute ideas to breakfast menus, seasonal dishes and daily specials
- Maintain high standards of food quality, consistency and presentation
- Coordinate preparation and ensure the kitchen is fully service-ready
- Monitor stock levels, ordering, rotation and wastage
- Maintain strict food safety, hygiene and kitchen cleanliness standards
- Ensure smooth communication and workflow throughout breakfast service
- Assist with wider kitchen operations when required
- Help create a positive, professional and team-focused kitchen environment
- Contribute to continuous improvement across kitchen procedures and service
Requirements & Eligibility
- Minimum 2–5 years' experience in a Sous Chef or similar senior kitchen role
- Strong experience working in breakfast or brunch-focused kitchens
- Experience with modern Australian breakfast cuisine is highly desirable
- Proven ability to supervise and develop junior chefs
- Confident leadership skills with the ability to lead by example
- Strong understanding of food preparation, presentation and quality standards
- Knowledge of stock control, ordering, food safety and kitchen procedures
- Ability to remain organised and composed during busy service periods
- Strong communication and teamwork skills
- High level of attention to detail and consistency
- Ability to commence early morning shifts
- Professional attitude and commitment to maintaining high kitchen standards
- Genuine interest in developing a long-term hospitality career in Australia
