The Opportunity
Authentic cuisine requires genuine technique. We are seeking a skilled and experienced Indian Chef with specialist capability in Hyderabadi Dum Biryani, Tandoor cooking and South Indian tiffins for a rewarding restaurant opportunity in Victoria.
This role is not simply about familiarity with Indian cuisine. We are looking for a chef who can demonstrate hands-on knowledge of traditional cooking methods, recipe execution, flavour development and consistent food preparation.
Successful applicants will join a professional kitchen environment focused on authentic food, reliable standards and a strong customer dining experience.
Key Responsibilities
- Preparing authentic Indian dishes with consistent flavour and presentation
- Specialising in Hyderabadi Dum Biryani preparation and cooking
- Preparing Tandoor dishes using appropriate traditional techniques
- Producing South Indian tiffins and other Indian menu items
- Preparing ingredients and completing mise en place for daily service
- Checking the quality and condition of foodstuffs upon delivery
- Controlling cooking temperatures across ovens, Tandoors, grills and other equipment
- Seasoning food according to established recipes and culinary experience
- Portioning and plating food with appropriate sauces, gravies and garnishes
- Preparing suitable meals for customers with dietary requirements
- Managing temperature-controlled food storage and stock rotation
- Supporting food cost control, ordering and daily stock requirements
- Inspecting food preparation areas to maintain safe and sanitary practices
- Maintaining kitchen cleanliness and compliance with food-handling regulations
- Training and supervising kitchen staff where required
Requirements & Eligibility
- Recognised commercial cookery qualification or trade certificate
- At least 1 year of relevant commercial kitchen experience
- Previous experience as a Chef, Sous Chef or in an equivalent culinary role
- Demonstrated specialist skills in Hyderabadi Dum Biryani preparation
- Strong Tandoor cooking experience
- Practical experience preparing South Indian tiffins
- Ability to demonstrate authentic Indian cooking techniques rather than general cuisine familiarity
- Knowledge of food costing, stock ordering and portion management
- Experience supervising and training kitchen team members
- Current Food Safety Supervisor certification is advantageous
- Strong communication and interpersonal skills
- Ability to work independently and take responsibility for daily tasks
- Proactive, reliable and self-motivated approach
- Ability to work efficiently in a busy restaurant environment
