We are seeking a verified and experienced Head Baker who is ready to lead production in a fast-paced artisan environment. This role is suited to bakers with demonstrated expertise in naturally fermented breads, dough development, and team leadership. Candidates who successfully complete our skills verification process will be considered for long-term employment with employer-sponsored pathways available where applicable.
Working alongside an experienced production team, you'll oversee daily bakery operations, mentor fellow bakers, and help maintain the exceptional standards the bakery is known for. The position includes a full-time schedule with an attractive 9-day fortnight, supporting a healthy work-life balance.
Key Responsibilities
- Lead daily artisan bread production from preparation through to baking
- Coordinate production plans to maintain quality and efficiency
- Produce naturally fermented and yeast-based artisan breads
- Supervise dough mixing, bulk fermentation, shaping, proofing, and baking
- Rotate across production areas to support operational flexibility
- Coach, train, and develop bakery team members
- Monitor food safety, hygiene, and quality assurance procedures
- Manage ingredient inventory and ordering requirements
- Prepare team rosters and allocate daily production tasks
- Work closely with production supervisors to optimise workflow
- Assist with seasonal product development and bakery innovation
- Maintain outstanding presentation and product consistency
Requirements & Eligibility
- Extensive experience in artisan bread production
- Strong knowledge of sourdough fermentation and yeast-based baking
- Confidence leading or supervising bakery teams
- Excellent understanding of dough management, hydration, and fermentation control
- Experience working with wholegrain and specialty breads
- The ability to train and support developing bakers
- Strong organisational and production planning skills
- Experience managing bakery stock and ordering processes
- Effective communication and collaborative leadership abilities
- Passion for continuous improvement and handcrafted quality
