The Opportunity
An exceptional opportunity is available for an experienced Restaurant Manager to lead the front-of-house operations at a newly established luxury hospitality destination in New South Wales. This premium venue combines boutique accommodation with an intimate fine dining restaurant, delivering a refined degustation experience focused on seasonal produce, exceptional service, and outstanding guest experiences.
Working closely with the Executive Chef, you will oversee all front-of-house operations from the venue's opening, helping establish service standards, develop a high-performing team, and create a welcoming dining environment. This is a hands-on leadership role suited to a hospitality professional who is passionate about fine dining, team development, and delivering memorable guest experiences.
Key Responsibilities
- Lead all front-of-house operations and ensure exceptional guest service
- Manage daily restaurant service across breakfast, degustation dining and hotel guest dining
- Recruit, train and mentor front-of-house team members
- Develop and maintain high service standards and operational procedures
- Collaborate closely with the Executive Chef to ensure seamless service delivery
- Oversee reservations, guest enquiries and private dining experiences
- Support the beverage programme, including premium wine service and cocktails
- Prepare staff rosters and manage labour costs
- Monitor daily operations and maintain excellent presentation standards
- Build a positive team culture focused on professionalism and hospitality excellence
- Ensure compliance with food safety, workplace health and safety, and licensing requirements
- Assist with future events and special dining experiences
Requirements & Eligibility
- Previous experience managing a fine dining or premium hospitality venue
- Strong leadership and team management skills
- Experience recruiting, training and developing hospitality teams
- Excellent customer service and communication skills
- Knowledge of wine service and premium food and beverage operations
- Ability to work collaboratively with kitchen leadership
- Strong organisational and operational management skills
- Experience with reservations, rostering and labour management
- High attention to detail and commitment to service excellence
- A current driver's licence and reliable transport are essential
- Full Australian work rights or eligibility for employer sponsorship
