The Opportunity
This opportunity is designed for an established hospitality professional whose experience, service standards and leadership capability can be clearly demonstrated and verified.
The role goes beyond simply managing a restaurant floor. You will be trusted to represent the venue, lead the guest experience and ensure the front-of-house operation performs consistently to a premium standard. Your background in fine dining, international hospitality, team leadership and wine service will be central to your success.
Working in a high-end farm-to-table environment in Victoria, you will take ownership of service delivery while contributing to staff development, operational efficiency, cost control and compliance.
Key Responsibilities
- Lead premium restaurant service and set a consistent standard for professionalism, pace and attention to detail
- Take responsibility for the complete front-of-house guest journey, from reservations through to final service
- Manage reservations, seating arrangements, guest preferences, VIP recognition and special occasions
- Build strong relationships with guests through confident, professional and personalised communication
- Lead by example on the restaurant floor and remain actively involved during service
- Coach and develop front-of-house employees through structured training, feedback and ongoing support
- Conduct pre-service meetings and ensure all team members understand daily priorities and service expectations
- Coordinate front-of-house activities with the kitchen team to maintain efficient and seamless service
- Review staffing requirements and prepare rosters based on bookings, events, seasonality and business demand
- Monitor labour utilisation and contribute to effective control of operating costs
- Manage beverage, consumable and service-stock requirements and coordinate timely ordering
- Monitor wastage, breakage and stock usage while identifying opportunities to improve operational efficiency
- Maintain accurate operational standards and support daily performance reporting
- Ensure compliance with food safety, hygiene, workplace health and safety and responsible service requirements
- Maintain compliance with venue procedures, licensing obligations and applicable regulations
Requirements & Eligibility
- Proven experience in restaurant management, assistant restaurant management or Maître d' positions
- Strong background in fine dining, premium hospitality or internationally recognised restaurant environments
- Demonstrated ability to deliver refined, structured and guest-focused service
- International hospitality experience will be highly regarded
- Proven leadership capability with experience training, mentoring and developing hospitality teams
- Strong understanding of labour planning, stock management, operational costs and compliance
- Confident knowledge of wine and ability to guide guests through an international wine selection
- Minimum WSET qualification required
- Excellent English communication skills
- Additional European language capability will be advantageous
- Professional, composed and decisive approach to leadership
- Strong attention to detail and commitment to consistently high service standards
- Ability to demonstrate and verify relevant professional experience and qualifications
