The Opportunity
strong opportunity is available for an accomplished culinary professional looking to take the next step in their career with a quality-focused hospitality operation in Wollongong.
The role is suited to a confident Head Chef who can take ownership of a kitchen, as well as an experienced Sous Chef ready to step into greater leadership responsibility. You will play an important role in maintaining kitchen standards, developing the team, supporting menu innovation and ensuring a consistently high-quality dining experience.
Candidates with experience in Italian cuisine, particularly pizza and pasta, will be highly regarded.
Key Responsibilities
- Take ownership of daily kitchen performance and service standards
- Lead, coach and develop the kitchen team
- Supervise food preparation, cooking and service operations
- Maintain consistency in food quality, presentation and portion sizes
- Develop and refine menus, recipes, specials and new dishes
- Monitor food costs, wastage, margins and portion control
- Manage kitchen ordering, stock levels and supplier relationships
- Assist with workforce planning, rosters and labour management
- Coordinate kitchen operations during high-volume service periods
- Ensure food safety, hygiene and workplace standards are consistently maintained
- Train and mentor junior chefs, cooks and apprentices
- Monitor kitchen organisation, cleanliness and operational efficiency
- Support inventory management and stock control processes
- Work collaboratively with management and front-of-house teams
- Lead kitchen operations when required in the absence of the Head Chef
- Contribute ideas that improve menu quality, kitchen efficiency and customer experience
- Build a positive, accountable and professional kitchen culture
Requirements & Eligibility
- Demonstrated experience as a Head Chef, Sous Chef or senior chef
- Strong leadership and team management capability
- Proven ability to maintain quality and consistency in a busy kitchen
- Professional approach to kitchen organisation and service
- Strong communication and interpersonal skills
- Sound knowledge of food safety, hygiene and kitchen compliance
- Experience managing food preparation, stock and wastage
- Ability to work weekends and rotating rosters
- Italian cuisine, pizza and pasta experience highly regarded
- Relevant culinary qualifications and/or substantial professional kitchen experience advantageous
