Sous Chef

A fantastic opportunity is available for a passionate and skilled Sous Chef to join a successful Italian kitchen in Victoria. This is a hands-on leadership position suited to a chef with strong Italian cooking experience and genuine expertise in fresh pasta production. 

Working closely with the Head Chef, you will help drive the kitchen through daily service, support and develop the team, and take full responsibility for operations when required. This role is ideal for an experienced Sous Chef or an ambitious Chef de Partie ready to take the next step in their career.

The role offers genuine input into daily specials and menu development, along with accommodation, relocation assistance and visa sponsorship opportunities for eligible candidates.

• Lead the fresh pasta section from preparation through to cooking and plating
• Support the Head Chef with daily kitchen operations
• Take responsibility for the full kitchen during the Head Chef's absence
• Train and mentor junior chefs and kitchen staff
• Maintain consistent food quality and presentation standards
• Prepare and coordinate daily mise en place
• Manage kitchen workflow during busy services
• Delegate tasks effectively across the kitchen team
• Assist with the development of specials and menu ideas
• Work confidently across all kitchen sections
• Maintain cleanliness, organisation and food safety standards

• Strong background in Italian cooking
• Demonstrated fresh pasta making experience
• Previous experience as a Sous Chef or strong Chef de Partie experience
• Ability to lead and motivate a kitchen team
• Strong communication and team management skills
• Excellent attention to detail
• Ability to perform effectively under pressure
• A hands-on and positive approach to kitchen leadership
• Commitment to high standards of quality and consistency
