We are looking for an experienced and ambitious Sous Chef who can combine strong kitchen leadership with a genuine passion for Japanese cuisine. This role is suited to a chef who enjoys working with quality ingredients, maintaining exceptional presentation standards and helping a team deliver consistently outstanding service.
Working alongside experienced senior culinary leadership, you will play an important role in coordinating kitchen operations, developing junior chefs and maintaining the standards expected in a refined dining environment.
Key Responsibilities
- Assist with the overall management and daily operation of the kitchen
- Lead kitchen service and coordinate preparation across multiple sections
- Supervise, motivate and support chefs and kitchen team members
- Prepare and deliver dishes to high standards of quality and presentation
- Maintain consistency in recipes, portion sizes and plating
- Contribute ideas for new dishes, specials and menu improvements
- Assist with recipe development and kitchen testing
- Coach and develop junior chefs through practical training and guidance
- Monitor kitchen workflow to ensure smooth and timely service
- Assist with stock ordering, receiving, storage and stock rotation
- Control food wastage and support effective cost management
- Assist with maintaining food and labour costs within targets
- Ensure compliance with food safety, hygiene and workplace safety requirements
- Maintain a clean, organised and efficient kitchen at all times
- Step into a senior leadership role and oversee kitchen operations when required
Requirements & Eligibility
- Proven experience as a Sous Chef or experienced Junior Sous Chef
- Strong professional kitchen experience in a high-quality dining environment
- Japanese cuisine experience is highly desirable
- Passion for Japanese culinary techniques, premium produce and refined presentation
- Demonstrated ability to lead and motivate a kitchen team
- Experience training and developing junior chefs
- Strong understanding of kitchen operations and service coordination
- High standards of food quality, consistency and presentation
- Excellent organisation and time-management abilities
- Ability to work efficiently and remain composed during busy services
- Strong communication and teamwork skills
- Reliable, professional and positive approach to work
- Availability to work evenings, weekends and public holidays
- Relevant culinary qualifications are advantageous
