Sous Chef

• Assist the Head Chef in managing day-to-day kitchen operations
• Lead kitchen service in the Head Chef's absence
• Prepare and present high-quality Italian-inspired dishes
• Oversee all kitchen sections during busy service periods
• Manage food ordering, stock control, and inventory levels
• Coordinate with suppliers to ensure timely product deliveries
• Train, mentor, and supervise junior kitchen staff
• Maintain food safety, hygiene, and HACCP compliance standards
• Monitor food quality, consistency, and presentation
• Assist with menu planning and seasonal menu development
• Work collaboratively to achieve efficient kitchen operations
• Maintain a clean, organised, and safe working environment

• Extensive experience working in high-volume commercial kitchens
• Strong knowledge of Italian cuisine, including fresh pasta and seafood preparation
• Experience leading a kitchen section or supervising a culinary team
• Certificate III or Certificate IV in Commercial Cookery, or equivalent industry experience
• Excellent leadership, communication, and organisational skills
• Strong understanding of food safety and HACCP procedures
• Ability to work efficiently under pressure
• Available to work evenings, weekends, and public holidays
• Passion for producing high-quality food and maintaining excellent kitchen standards
